Owned by a young entrepreneur and a well-experienced cook, Chef Thomas Murillo, The Wild Juan promises a fusion of Filipino and Tex-Mex – a fusion of United States cuisine and Mexican cuisines. Chef Tom is a Filipino-American, born in Chicago, Illinois, USA but spent most of his time in the Philippines where he gained his Filipino-Western techniques in cooking.
His love and passion for food started in his youth. He was a Consular and Diplomatic Affairs student in his sophomore year at the College of Saint Benilde. He decided to take commercial cooking and Culinary Arts at First Gourmet Academy and finally had his apprenticeship. This led him further into the industry by becoming one of the pioneering members behind Paprika PH. After years later, he finally had his own restaurant along Tagaytay Ridge. Thus, The Wild Juan is born.
Chef Tom, together with Chef Marcial Balozo, both gentlemen have been busy creating and innovating dishes for the Wild Juan. The food creations are something we Filipinos are familiar with; yet they prepared them with an interesting twist and flair.
A peek through their menu is one of their house originals and best sellers, Gumbulalo. A well-known Filipino beef shank soup, Bulalo, infused with Gumbo, a dish originated in Louisiana, USA. Tagaytay is famous for its Bulalo and with other restaurants having their own style of Bulalo; Chef Tom created their own “Extra Special Bulalo”. It’s a combination perfectly partnered with mounds of rice.
The Wild Juan also offers their own version of Caldereta Wings, Sisig, Krispy Kasoy Kare-Kare, known as KKK and there is more to find out.
Chill in their beer garden, which opens around at 5pm. Whereas The Wild Juan promotes local and proud Filipino made beverages, you can have a taste of their Filipino-craft beers.
